Being a tightwad, I didn't do anything fancy, but here's what we did: When the old gas grill died, we kept the cart it was mounted on, cut apiece of 2' x 4' plywood and mounted it to the top of the cart. Then we cut two holes: one to hold a plastic basket for fish offal and one to hold a Rubbermaid container with saltwater for the filets. I keep a stash of paper towels in one of the wire baskets that are part of the cart.
When I'm done cleaning fish, Doug hoses it off and sprays the surface with Lysol Kitchen Disinfectant.
