    Default Texas Cornbread


    This is really good with a pot of beans or chili beans. With fish too, fried fish + french fries + hushpuppies = a whole lot of grease at one time.
    TEXAS CORNBREAD
    1 cup self-rising cornmeal
    1/2 cup Wesson oil
    1 small can creamed corn
    2 eggs
    1 medium onion, chopped
    1/2 lb. Cheddar cheese, grated
    1 small green pepper, chopped
    1 small red pepper, chopped
    2 jalapeno peppers, chopped, more or less, as you like them
    Mix all ingredients except cheese. Pour half of batter in greased skillet. Spread cheese over this mixture. Add remaining batter. Bake at 400 degrees for 30-40 minutes (until browned).

    Bout the same recepie I use for Hush pups,cept I add the cheese to the mix, then spoon drop in fryer.. yummy good...

    Now if I was to make that, I would ditch the red and green peppers (boy I hate them), double up on the jalapenos and onions and lots of good ole stinky sharp cheese.

    Default Health indicators

    Yep. Red and green and "hellapino" peppers are added for health indicaors Bill.

    Check your wiping paper...If U see red and green and it burns, U healthy...ha

    I never thought of it that way. I guess I'm healthy now. My wife buys me Texas Pete by the quart. Good stuff!!

    Yeah, sometimes I just mix the cheese into the batter, still good. Last time I threw in a couple of habaneros, those things will make you want to $*#t in the creek. One thing I like about this is it heats up good in the microwave, not dry & crumbly like most cornbread.

    Hush Pups heat up good too. Not dry....

    Last time I had habaneros me BVD's had holes in em. Looked like battery acid got spilt on 'em...ha
