    Default Mushroom & Swiss stuffed French Bread


    Mushroom & Swiss stuffed French Bread

    1 Loaf Fresh French Bread (Plain)
    1/4 Cup Olive Oil
    3 Packages sliced raw Mushrooms
    3/4 pound sliced Swiss Cheese
    Salt & Pepper

    Cut Loaf in half longways. Pull out the soft center of each side leaving what looks like two "boats". Set aside. Over Med-High warm Olive Oil in large skillet or stewing pot, place in Mushrooms, stir constantly so Mushrooms won't burn. Let Mushrooms "Brown" until all water is cooked out of them (usually 10-15 mins). Salt & Pepper to taste. Set aside to cool. Brush some Olive Oil all over the bread, then spoon cooled mushrooms into the bread loafs and cover with sliced cheese and place under broiler until cheese is melted. Remove, Slice and Serve as side to any dish.

    You can sub the Mushrooms for any other cooked Veggie/Meat you like and the same goes for the cheese.

    Hey Sac was fixin to log off and just remembered. I put a roast and carrotin the crockpot at noon and mama added a few spuds and a little cabbage later
    on. Something was needed to go with it so we made your stuffed French bread recipe. It was great, and just the ticket. I used Havarti cheese instead
    of Swiss & sliced up a few pieces of leftover cooked broccolli and added it. We will do that again, a keeper, and a welcome change for us. Thanks.
