    Default Crappie Ceviche (Say-v-che)


    1 lb FRESH (unfrozen) fish fillets UNCOOKED (cut into small cubes)
    juice of three lemons
    juice of three sour oranges or limes
    one medium onion, thinly sliced
    salt and pepper to taste
    a pinch of cayenne pepper
    1 clove of garlic, minced
    1 hot pepper, chopped fine
    2 tablespoons chopped parsley
    2 tablespoons chopped cilantro (coriander)

    Cut fish into pieces and place on a platter. Place the thinly sliced onions on the fish. Then add the remaining ingredients, covering with the juices. Place in refrigerator for at least 4 hours before serving (overnight is better). Take a spoonful, place on a cracker, ENJOY!

    This kind of sounds like it would be "crappie sushi". Do you eat it with chop sticks? :D

    Well, for the most part "true sushi" has totally raw fish in it. The acid in the lemons/oranges/limes technically "cooks" the Crappie in the above dish. Cut the numbers in half, make some and try it. It's good. I do it with Red Snapper, etc.

    TRUST ME, if you eat ANY FOOD AT ALL, you have eaten something worse than "raw fish". You might not have known about it, but our food supply is contaminated. Atleast you're the ONLY person to have handled the fish in the above recipie.

    OOOh! Great recipe. I am a big sushi and sashimi fan and this sounds wonderful to me. Yes, you're right, ceviche is not exactly sushi (raw fish and rice) or sashimi (just raw fish and a sause), but rather cooked in the acid of the citrus.

    Man, now I got a bad hankerin for pickled fish. Anybody got any recipes, the one I have is allright but nothin to brag about.
