    Hushpuppies with crappie fillets - made me look at the clock to see how long till lunch.

    So, what is your favorite recipe for hush puppies?

    Hey Big Zig,

    Try these hushpuppies sometime and tell me what you think.

    HUSH PUPPIES

    Put about 1/2 cup cream style corn in a small mixing bowl, mug or two cup measuring cup.

    Beat in one egg.

    Mix in about 1/4 cup beer and about two tablespoons freshly minced onion and one tablespoon minced garlic (onions and/or garlic can be omitted or adjusted to taste). If you're in a hurry you can use about three tablespoons of Picante Sauce in place of the beer, onions and garlic.

    Stir in self-rising white corn meal JUST until batter is thick enough to keep a spoon standing up.

    Fry in canola or peanut oil at 360-degrees until golden brown.

    Give 'em a poke to turn over (if they don't turn themselves)

    Cool on layers of newspaper covered with a paper towel.

    SERVE WARM with fish or seafood.

    CAUTION: USE CREAM CORN WITH NO WHOLE KERNELS BECAUSE THEY POP AND SPATTER HOT GREASE

    pan-fried 'eh? How about in a deep fryer (or a fry daddy)? And it will have to be a Corona........

    I deep-fry them along with the fish in a cast iron pot on the kitchen stove (got a real good vent fan).

    Got to go out to the garden, pick fresh jalapenos, and chop, makes those puppies be able to run with the big boys. They no long have to stay on the porch.

    Did a batch up over the weekend - had to learn the "fry time", but after I dried out a few, the rest came out great.

    now, to bump them up a notch..............

    Hey Big Zig,

    Glad you liked them. I like 'em just golden brown and not real dark because like you said they can get dry if you cook them too long. Of course it depends on the oil you use and whether it's re-used how dark they get when they're done.

    With the basic ingredients - cream corn, egg and self-rising white cornmeal mix you can add most anything you like, I guess. I've not tried them with Jalepenos but you got me thinking about it.
