I fried it just like i fry crappie. I butterflied it several times until it was about a quarter to a half inch thick. I then rolled it in flour and dipped it in eggs, milk, and franks hot sauce. I then rolled it in ritz cracker crumbs and deep fried it for about 2 minutes. It was the best fish that I have ever tasted.

If you didn't bleed it, it probably will not taste good. I have fried it twice and bbq'd it once. It was good one of the times I fried it, the other it was fishy. When I bbq'd it, I threw it away, it was very fishy! Give me king, or grouper over cobia any day. JMO Hope yours turns out better than mine did.:D
