    It is easier for me to upload the pictures first with this process. Peeled & Devined 21 count shrimp butterfly almost all the way through to speed cooking. Then I zest a Paige Mandarin off my tree (the most intense orange flavored orange), press the garlic, adding to the bowl with the shrimp. 1/2 of the mandarin is squeezed in, 1/3 cup Ponzu sauce, 2 TBLS Soy sauce, 2 TBLS Seasoned Rice Wine Vingar, not shown 1 TBLS Turbano sugar, Garlic oil, salt & pepper added last. I stir this and let marinate for 30-45 minutes while 1/2 of the TEC is heating up.

    The Bamboo skewers were soaked over an hour before using or they will catch fire. Removing the shrimp from the marinate and skewering can be messy. I place on the TEC for 90-120 seconds each side then remove from heat.

    Wow, that looks and sounds yummy! Had a little spicy yum yum sauce tonight with some fish and shrimp myself.
