    I think anymore than medium rare is to much.

    pound them flat as a pancake or even thinner and try well done , we eat them that way frequently ,pan fried in a little oil ,seasoned up well .
    pretty darn ridiculous tasty
    them there fillets look tasty for sure though .....

    I missed the pictures, yummy! Something needs to said about Texans here, they make the absolute Best Chicken Fried Venison as well as Steak. The gravy they use, Whaaaatt! Now I want to drive to Sam Rayburn.

    I wrapped them with thick bacon and charcoal grilled them medium rare. Tasted like beef filet mignon with a coarser texture. Name:  20210404_130126.jpg
