Y'all eat red beans and rice in Wisconsin?? From the picture I figured it for a Cajun from Louisiana. I agree the recipe is good. Fixed it several times.

Never thought about red beans and rice with fish but it sounds good.

Next time we make this I am going to use ranch flavored Doritos in a blender for the breading

    Ingredients

    1 or 2 eggs
¾ cup Panko Italian or any bread crumbs
    ¼ cup Parmesan cheese
    ¼ teaspoon ground dried thyme
    Fish filets
    ¼ cup melted butter

    Directions

    1. Preheat oven to 500 degrees

    2. In a small bowl prepare an egg wash. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the filets in the egg wash and then press into the crumb mixture to coat. Place filets in a glass baking dish, and drizzle with melted butter.

    3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.
