Tater Soup:
Fill a big ol' pot about half full of cut up taters AND 4 whole taters.
Cut up one big sweet onion and toss that into the pot as well.
Add about 2 inches more water than you got taters and boil the hound out of 'em (add salt to the water now).
Pull out the 4 whole taters and mash em up good.
Drain off enough water to lower the level to the top of the cut up taters and add the mashed taters.
Put in 1 can of evaporated milk and enough sweet milk to get he volume up to where you want it.
Crumble and add 7 or 8 slices of bacon cooked crisp.
Spice with copius amounts of black pepper, garlic powder, paprika, some cavenders and a bit of creole seasoning.
Toss in a stick of butter.
Add some cornstarch.
Keep an eye on it and stir on a fairly regular basis since the milk products will want to stick and burn if neglected.
That's about it. I'm the wrong one to ask about amounts since I'm momma trained and momma trains to make it good, not to make it proportional :D

I make hash by cutting up taters and onions and boiling until done. I add a little salt while boiling.Then I pour off most of the water and add a qt. can of canned deer meat and the water in the can (this was already seasoned with salt and pepper when canned). Cook a pan of biscuits and get your hash back hot again and youre good to go.
If you dont have canned deer meat you could substitute with canned beef or a beef roast torn apart.
