    Red face Baking crappie -- HELP !!!--post your best recipe

    While things are slow I need some recipes on baking crappie. So post the best recipes you got Dig deep in the boxes and bring out the good ones I might even try broiled crappie if y'all got a recipe. :D

    Default Grill not baked.....

    Ronnie, I just can't make myself bake something as good as a crappie...but here's something to try on the grill....let me know if you like 'em...
    "Cajun Specktacular"
    cut crappie fillets into small strips
    marinate in your choice (white wine or red wine)
    dash of worcestershire sauce
    cayenne pepper to taste
    sprinkle w/ cajun seasoning
    if you leave skin on, cook skin side down
    if you remove skin roll fillet & toothpick
    cook low & slow
    baste w/ butter & lemon juice
    don't marinate fillets for a long period of time, 30 minutes should do it
    hope ya'll like 'em......

    i tried something for the first time with crappie recently that turned out fantastic! i normally do it with snapper and such, but here it goes.......marinate the crappie in milk or buttermilk for a few hrs.

    in a deep pan, sautee some onions, peppers, whatever else you perfer. add a small amount of butter. salt and pepper fillets to your preference. drop fillets neatly on top of the veggies and cover pan....keep on low heat. depending on amount of fillets it may take 8-10 minutes to fully cook. once cooked squeeze a lemon and you can serve as is, or put some cheese and/or salsa on top and serve. i perfer to keep it plain and it was delicious......very healthy for you as well.

    Hey Ronnie. My father was not supposed to eat fried food yet he loved fish. I would take crappie fillets to he and my mother and she would bake them. She sprayed a pan with butter flavored Pam and put the fillets in the pan. She then squeezed lemon juice on them and added pepper and then topped them with a little butter. Baked them until they were done and they were very tasty. Easy and very good.

    I tried this with whole crappie. Get a couple slab, cut slits into their bodies. Get a mixture of oyster sauce, fish sauce, grated ginger, mince garlic (lots of it), sesame oil, etc Marinate fish for a few hours. Preheat oven to 375 degrees. Wrap fish in foil packet and bake for 10 to 15 min till meat gets white and flakey. Beat that Red Lobster
    Oh I could wrestle a monster fish
