My kids (OK...me too) have been hittin the brim pretty hard. Yesterday I took a bunch out of the freezer and simmered em in a big pot of water til the skin peeled off easy and the meat flaked from the bones. Put the meat in a big bowl with some egg, bread crumbs, celery, onion etc and made up some fishcakes. Fried em up in bacon grease.


Topped em with some tabasco pepper roumalade and made a sammage.

Add a little Old Bay and you could have a "Crabby Patty".

kunes...I did basically the same thing with crappie....and man were they ever good. Gonna try that again....
