Growing up in SE Louisiana, we fished some of the brackish water around. A good day on the boat was catching a full stringer of catfish, bluegills, and Sac-a-lait (crappie). As for taste, it was all good. If you throw in a few channel croaker from the boat channels you got yourself one good meal.

There is no other fish on this rocck that tastes better than a good corn-meal battered filet of crappie , sac-a-lait, papermouth, spec, or whatever you want to call 'em..they are the cavior of fish.....hee hee...That's my opinion

Wow...that is a tough one. I classify it as Walleye/yellow perch vs. crappie for freshwater king of the table. They both have the cleanest meat, no bloodline at all. I have had both.....much more of the latter, and I just don't know. They are both ridiculously great.

Then there are many folks that calls the Freshwater Drum a Perch.

Don't come to New Hampshire to fish white perch. We now have a creel limit of 25 white perch daily because of you fish hogs who let them go to waste.

you guys are making me hungry lol.
I could go for a couple filets (boned and skined) perch filets dipped in seasoned batter and deep fried. (only when there big enough to filet) hehe I do crappie the same way, sometime it's hard to decide which is better.
My favorite method is to filet and cut into quarters, season them or make a seasoned meal mix, dip them in mix, then dip in a egg and milk batter, then into white or yellow corn meal (fine), and then into hot oil, then dip into mouth, To die for !!!

Yellow perch are about the best eating fish there is!!Those jumbos out of lake michigan were something to look forward to, till the gill netters got almost all of them. One of the reasons I moved to KY

this is just to let ya'll know what sac-a-lait in french means sack of milk discribing the milky white meat of a crappie or like us cajuns call them sac-a-lait
