Default Holiday Recipes

The hushpuppy thread got me thinking that everyboday has that one thing they make every year for the Holidays that everyone just raves about. I'd like to hear some of yours. Here's a couple of mine. To save space let's just post the name of the dish and a description. If anybody want the recipe use email or PM.

Southern Praline Yams
It's a rich sweet potato casserole with a caramel pecan topping.

My turkey
I thaw the bird out completly, then soak it in a cooler full of water, a half box of salt and ice on Wednesday. Some people add apple juice or apple cider vinegar too. It will cook about two hours faster and be the best turkey (other than deep fried) that you've ever had.

Ambrosia..has to be ambrosia...every fruit known to man with coconut, and pecans in a powdered sugar syrup. YUMM !!!!

Paul has to have my green bean casserole for the holidays every year and I can't do without homemade pumpkin pie!

Corn Puddin'
1 can white shoepeg corn (I have used reg corn)
1/4 tsp salt
1/4 tsp pepper
3 beaten eggs
3 Tbsp melted butter/marg
1 c milk
1 tsp flour
3 Tbsp sugar
Combine salt, pepper, eggs, butter, flour, & sugar. Mix in milk and corn. Bake at 350
1 hr in a 1-1/2 qt casserole dish uncovered.

Horseshoer, beat me to the punch. This is a holiday MUST have around my house. Tastes excellent HOT or COLD. I know some family members who eat it like it's a dessert. I think the white kernel corn makes a world of difference.

Corn Pudding Recipe
INGREDIENTS:

2 cups white whole kernel corn
4 eggs
4 ounces flour (about 1 cup + 2 tablespoons)
1 quart milk
3 Tbsp sugar
2 ounces butter, melted
1 teaspoon salt
PREPARATION:

In a casserole dish, mix corn, salt, sugar and butter. Beat eggs and add to milk. Stir into the corn mixture. Preheat oven to 450°.

Place in oven for 10 minutes. Remove and stir with long prong fork, disturbing the top as little as possible.

Return to the oven for 10 more minutes. Repeat stirring procedure.

Return to oven for 10 more minutes. Repeat stirring procedure.

Return to oven for 10 - 15 minutes. Top should be lightly brown and pudding should be firm.

P.S. - My grandfather put me in the habit of having to have fried oysters for breakfast on Thanksgiving and Christmas day.
