Default Hush Puppy Recipe

Anyone have a good one they would like to share? I have two criterias. I want them to be light and I love chopped onions in them. Thanks.

3 cups cornmeal
2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups milk
1/2 cup water
1 egg, beaten
1 large onion, minced
2 tablespoons minced chives
This is the one we use. When sweet corn is in season we scalp an ear, chop up the
kernals a little, and mix it in the batter. Not sure if these are light but they taste good.

baking soda and the egg will help make them light

I put pepper jelly in mine - it makes em hot and a little sweet at the same time. Makes them taste really great!

I have never had anyone eat mine that did not like them.. I have standard and then I make some that will make you run to the creek in the morning.
2 cups self rising meal
1 cup self rising flower
2 med onions choped
plenty of pepper the amount is what you like. Me I use 4 table spoons full
dash of salt
Dash of garlic powder
one egg
for the liquid use beer
Mix well and the mix should be thick not thin.
I drop mine by hand.
They turn out light and great.

Also I make the same but add plenty of hot peppers ground up.
Also for a different taste. Add some sage..

Also the beer will cook out of the hush puppys, My motherinlaw loves mine and she hates beer..
This is the way our famly has make them for over 75 years for us and the resturant they used to run. Also wild turkey works great in them also.

Default Hush Puppies

1 Box Jiffy Corn Muffin Mix
1 Tablespoon (rounded) pancake flour
1 Egg
Onion to taste (grated fine)
Milk just to thicken batter

Let set at room temperature until batter has risen. Might take as long as
two hours

She uses a melon scoop. Dip the scoop in the hot oil, then get your batter,
and put scoop of batter back into the hot oil. They will brown, and rise to
the top of the oil when done. You might have to touch a bit to turn over so
they brown evenly.

Thanks all. I will try each recipe. Two questions: 1) Do you fry the Hush Puppies in the same oil you fried the fish in? 2) How much pepper jelly do you use? Thanks again.

Please also add a little chopped green pepper (bell pepper) in to whatever way you choose to make them. This really makes the pups taste good too

I don't make our hush dogs. I buy them from the store but, I really think Captains D's has great hush dogs.
