Yum, Yum!
Well don't know if this recipe can top cevechi but my wife and I love them. A must try! Makes 6-8 cakes
Ingredients:
One pack Zatarans crab boil
1 red bell pepper
1/2 medium onion
1 cup saltine crackers finely crushed (almost one sleeve)
1/3 cup mayonnaise
1 large egg beaten
2 tsp old bay seasoning
2 tsp Worcestershire (thank you spell check)
2 tsp mustard I like spicy
1/4 tsp hot sauce (optional for you sissys)
1 lb crappie fillets
Butter
Finely chop onion and pepper together and cook till soft with a little butter. 1/2 tablespoon butter
boil 1 qt water with 1 oz crab boil. There is 4 oz to the pack.
When water is boiling drop fillets in. Bring fillets to boil then cook for 2 min, then take off heat and let set for 5 min then drain
Next put saltines in ziplock bag and pound em to dust. Mix next 6 ingredients together in a bowl.
Then mix pepper/onion mix, saltines and wet ingredients in the bowl together 1/2 way then shred cooked crappie in. Don't mix too much because crappie will be very flakey.
Heat 1tbs butter in skillet. Cook the cakes until they have a little crust over med heat. Flip and cook other side.
Enjoy if you can keep your tongue from slapping your forehead,,,

Yummy! I have made crappie cakes several times (very similar recipe) and your pics just made we want some more. Thanks for sharing.
