Thread: Spicy crackers & Blackened crappie

    Thumbs up Spicy crackers & Blackened crappie

    Here ya go for those of you that asked at the gathering.


    Spicy Crackers

    1 cup of good olive oil (extra virgin)
    1 pack of ranch dressing mix
    1 table spoon of crushed red peppers( more if you like them hotter)
    1 box of crackers( 4 sleeves )

    Mix ranch dressing mix and chrushed peppers in the olive oil and place the crackers in a 1 callon zip loc bag. Then pour mixture over the crackers and seal the bag turn it over several times to coat all the crackers then let them sit for 24 hours and just turn the bag over every once in a while during that peroid.

    Blackened Crappie

    unsalted butter (the real stuff) two sticks per 10 filets
    Tony Chachere's seasoning
    Tapatio hot sauce

    melt the butter in a sauce pan pour in the Tony's lots of it (cover the top of the butter) add hot sauce to your taste then stir this mixture and remove from heat.
    heat a cast iron skillet till it is smokin hot then dip your filet in the melted butter and place it in the skillet cook it for apprx 1 min per side then remove. The thinner the filet the better it works. This is for sure an outside cooking recipe because there will be smoke and fire so please be careful.

    I missed the crackers but the blacken crappie was fine.

    That was some fine stuff, let me tell you. deer meat, peppers and cheese. I coulda eaten all of that stuff

    That was some I had made up at Dino's in Hernado, Every year I get two or three deer processed into summer sausage. It is his Jalapeno and cheese summer sausage and it goes well with the spicy crackers.

    It goes extreemly well with them crackers....Thought biggers old lady was about to body slam me at one point over them crackers.....
