Put the trolling motor on the bow .. loosen the main motor and slide it over a couple of inches --- try it to see if it is enough then tighten everything down
I have a Lund 16 ft'er with a 30 ES Evinrude, tiller control. The beam of the boat is 65". A MK 50 lb thrust trolling motor is also transom mounted. In 1973 I bought an Evinrude 4 hp. That motor has been everywhere and runs like a champion. However, when I tried it on the stern, it interfered with its larger cousin by restricting turning. Any ideas?

So moving the 30 a couple of inches is ok? Have you ever done that?

I would not recommend moving main motor of that size off center. Will make for a ill handling boat and could be dangerous at high speed. Plus it could upset the balance of the boat.
This is what you need to be able to mount further to the side for clearance.

Thanks for the help. I too worry about affecting the handling of the boat by moving the larger motor. Also, that very same bracket is on eBay for $122 less than what Cabelas is asking !!!
