Great looking jigs – like the flutter bug.
How do you keep the chenille legs from unraveling?

I used ice chenille, medium. The tail is just a piece of ice chenille doubled over and tied onto hook shank. These are tied on 1/32 heads. This material is very light. The drop rate is comparable to a 1/64 jig. I like using these when the fish are very shallow. They really knock the crap out of em. When they are "slapping" at other jigs and you just can't get a hookset, these are the ticket!

Tie a simple knot in the ends. Can't even tell it's there.

Burning the ends of the iced chenille keeps them from unraveling too.

Look like they should work just like you said. When the fish are not "taking" anything they should be just the ticket to get a real hit.
I love taking my kids fishing, now if I could just manage to fish at the same time.
