how do u cook them straight out of a garden?
Wash them really good. Put them in a large pan of boiling water. After they have cooked about 15-20 min pour out the water, it will be really green. Put new water in there and bring back to a boil and continue to cook until tender. Add bacon slices or country ham pieces for flavoring.
Take you kids fishing today!!! They will be grown tomorrow.
the true secret to collard greens is to cook them real slow, and I always sprinkle a little sugar on them before cooking..........and like buffalo13 said, season with bacon, country ham or the more common standard, a smoked ham hock

I like to boil them in chicken broth instead of water.
gives them a much richer flavor
or half water half broth.
and not bland like cooking in water.
This is the recipe my Grandmother whom was born, raised and lived in South GA. her entire life... All that I would add to the pot is crushed red pepper... Don't forget the pepper sauce on the table... Two things I would like to add, Remove the heavy stalks fron the greens and if you can.. Cook them outside in a washtub cause they will stink up the house otherwise!!
