Default lightest hushpuppy's

Lightest hushpuppies

1 cup corn meal

1/2 cup flour

2ea eggs

1/2 cup milk

1/2 teaspoon lawerys salt

1/2 teaspoon fresh ground black pepper

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/8 cup bacon grease or (option veg oil)

1/4 onion diced.

in a bowl mix all dry ingredients till blended

in a different bowl mix milk, eggs, oil, and diced onions.

beat to a froth then pour into the dry ingredients mix with a fork

until smooth . don't mix again. let set for 10 minutes.

drop into hot grease 375 degrees med high heat.

by the spoon full cook till golden brown keep turning till

browned on all sides when they float they are done.

makes 24 tablespoon size puppy's

Copied straight from Paula Deen's website:

6 cup vegetable oil
1 1/2 cup self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten

Directions:
Using a large skillet, preheat oil for frying to 350 degrees.

Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter one teaspoon at a time into the oil. Dip the spoon in a glass of water after each hush puppy is dropped in the oil. Fry until golden brown, turning the hush puppies during the cooking process.

Yield: 35 Hush puppies
Preparation time: 20 minutes
Cooking time: 20 minutes
Ease of preparation: easy

These guys are restaurant quality or better, I've had people rave about them. Can't take the credit for mixin' up some groceries and deep fryin' em. They really are awesome!

Just like my mom used to make. Don't get any better.
For a twist, add a can of cream style corn to them mixture.
May have to cut back on the milk just alittle.
