Anybody have any experience with this? Tried a reciepe last night, and it was a total joke. Would like to try this way of cooking at least once where the fish doesnt just dehydrate in the ven.

I tried this one last night with catfish and it was the best oven fish I have had.
Panko bread crumbs-Toast at 350 for 15 to 20 minutes till they turn a little golden brown,let cool.
Roll in Wondera Gravy flour then dip in a egg wash then roll in Panko crumbs.
Put on wire rack on a cookie sheet and spray with pam and bake at 425 for 20 minutes.
I just seasoned with salt but add your favorite.

Tried a recipe with Walleye, It was a mixture of I believe 1/4 Cup bread crumbs. I cup instant potatoe flakes with 1 tsp dill weed mixed in. Dip fish in melted butter roll in mixture bake on sheet pan @ 350 rolling it over after about 8 minutes. I cooked it about 25 minutes until it was brown it turned out excellent. The measurements may not be quite right but its close.
I'll be on a diet for the rest of my life and love to eat fish (no more fried) ever! So had to find something best for me is prepare fish and drain in wire basket, whip up a egg or two dip fish in egg, dredge in cracker crumbs, low fat and low carb off course put these on a baking pan and heat up some olive oil which I add a little bit of heart healthy margine too and lightly drizzle over the fillets. Bake 425 for 15 min. if not brown turn oven to broil for a couple min. watch closely remove let cool a bit enjoy. I do this so much anymore that I grind up a box of crackers at a time in a food processor. I like to add a bit of yellow cornmeal and a bit of ground parmesan cheese low fat of course and seasoning to taste enjoy! I also spray pan with Pam.
I used crappies, and "Andy's" fish breading. greased cookie sheet, 450 for 7-10 minutes. Well the bottom was soggy as could be, and the top of the fish, the breading never browned, and what was ontop was just the pure breading, you could blow it off. Needless to say, a total waste. Left it in longer, and the fish totally dried out, and the breading never browned.
Might try the broil thing. I have baked/broiled alot of fish(no breading) and never had any troubles, most cooked in 3-5 minutes.
Im not afraid of grease(actually, i live off of it!) but was hoping to find something a bit less messy to prepare, and thought this oven fry was a shoe-in, reckon not
