I've been eating a lot of sushi at sushi bars lately. Curious to know if anyone has dared to try to make their own. with crappie or not.
sushi chef gave me some suggestions for preparing fish for sushi. more so with saltwater fish I catch in the area. i guess same would apply to freshwater fish?!!?

If im not mistaken, freshwater fish generally are too risky to eat raw. Not sure, hopefully somebody will chime in
No No NO sushi. raw steak raw vinison no raw fish.
You may want to steam or smoke the crappie and roll it up in some rice and seaweed. Like the smoked salmon roll with cream cheese and such. I've been tinkering with the idea of a Vietnamese style spring roll with crappie in it.

In Japanese cuisine, sushi is vinegared rice, usually topped with other ingredients, including fish, various meats, and vegetables. Outside of Japan, sushi is sometimes misunderstood to mean the raw fish itself, or even any fresh raw-seafood dishes. In Japan, sliced raw fish alone is called sashimi and is distinct from sushi, as sashimi is the raw fish component, not the rice component.
With that being said I believe alot of people hear "sushi" and automatically think of raw fish. You can definately use crappie in sushi, but I would in no way (unless it was life or death) take the chance on eating raw freshwater fish. With all the pollution in the world, it is just not wise. I enjoy "sushi" and "sashimi" (only saltwater) and may have to try out crappie sushi one day. I would go with whiskers suggestion of steaming or smoking.

if you are using absolutely fresh fish then your problem wouldnt be from bacteria on the inside of the meat but from parasites if the fish have them. that said, i dont know if all parasites are always very obvious, but if you feel safe about the meat you are using, i would still soak it in vinegar or lime juice before hand to "cook" the very outside, just to kill the surface bacteria while still keeping the fresh taste of the fish. i have heard of reports in my state of bluegills having wormy parasites, im not sure if it was in the meat or on the skin, and i have also heard of wormy parasites on the outside of trout. but freshwater allows for a lot more stuff to grow and unseen stuff could be in the meat. if it was me i would also steam or smoke it first.

Never eat raw freshwater fish unless you want to get sick.
