Fish ParasitesFor the most part almost any cooked fished is safe to consume as long as it has been properly handled and prepared. Parasitic infections are most problematic when fish and shellfish are consumed in the raw state. This is not to say that eating either as "sashimi" isn't safe. If you do consume raw fish/shellfish make sure it's not a freshwater species. Believe it or not parasitic infections from freshwater fish/shellfish are very problematic in some parts of the world (e.g. Southeast Asia.)
Thanks for your help. DO you have any more info for me on why thsi is bad. I can accept that it was not a smart move, but I want to know more about why freshwater fish are worse than saltwater for sashimi.
The bottom line is that it is too bad, because that was easily the best sashimi I have ever eaten, even with the substandard wasabi in a tube. I would like to find some far-raised crappie and repeat the experience. Can you even get farm-raised crappie? I don't know why farm-raised catfish and walleye are everywhere, but crappie is impossible (or at least difficult) to find. For my money, I think crappie is the best fish for eating.
fresh water fish is a no no for sushi.....salt water fish is the way to go...
The fish used in commercial sushi and sashimi is frozen in a commercial freezer at something like -270*F below zero to kill any parasites, your regular kitchen freezer doesn't even get close.
There have been horror stories about people making their own home made sushi and sashimi only to come down with terrible abdominal pains a couple weeks later and when they admitted to the hospital and undergo surgery they find nice parasites like a 4" worm resembling a red centipede... I'll see if I can find the story.
Freshwater fish some "other" guidelines:
1) Water temp below 52deg
2) Never raw anytime
3) For fresh taste use Lime juice min. 4hr. marinade
4) Most parasites are curable (if your Dr. is smart enough to find or look)
this alone should scare the stuffing out of you.
5) It's the bacteria you should really worry about, most harmful ones die
in cold water. Not all, so acidize them at the least
6) Enjoy the ones with NO BLEMISHES
7) Only use live fish
The medications for parasites are NOT pleasant, and your family and sex
partner might have to take them also. It's not just take a pill and it over,
it may last for months, with many secondary infections!!
