Need Quail Recipes
I've eaten quail all my life but I've always fried them or brown them and smother in gravy. Any of you have something a little different I could try?

Quail and Rice caserole
Try this. Take your quail and lightly rolled them in flour. Fry them until they are light brown and crispy on the outside. At this point the inside of the quail does NOT have to be done. You do not want to completely cook the quail; your just browning them. In the mean time you can have a pot of boiling rice on. Try to time it to where the rice is done and the quail are browned at the same time. Now what you want to do is strain the rice and add cream of mushroom soup.(I cant say how much because I dont know how much your making) Mix enough mushroom soup in with the rice to where its not runny but not thick either. Pour the rice and mushroom soup mixture in the bottom of the baking dish and place the browned quail on top of the mixture. Bake at 375 degrees until your sure the quail are done. I also spray my pan with a little bit of olive oil just so the rice doesnt stick to the pan. You can add extra mushrooms of you like. I love the stuff. Let me know what you think!

Sounds tastey. Do you cover it while baking?

Quail Recipe
Thats a good question. My dad always covered it with aluminum foil but I never do. Seems like it taste the same either way. I have cooked lots of quail and even pheasants this way. Its tough to beat southern fried quail with gravy but i think you will like it.
goog eats,
Ryan
