Default Ultimate Crispy Crappie

I've cooked fish all my life and never really been able to duplicate the crispy filets that I get at seafood resturants. But now I can! I read a post by Kaptain K and he recommended using half and half and cornmeal and that's all. I tried it Friday night and if was perfect. I took crappie filets, cut them in ablut 4 pieces each and soaked them in half & half for about 15 min. and then rolled them in seasoned yellow corn meal and put them is a Fry Daddy (keeps the oil at about 375 - 385 degrees) until they just started to tourn brown. They were the classic fried fish I have never been able to do. Something else I did was when I cut out the rib cage, I filet the little piece of meat off the ribs and fried them the same way fut only for about 30 seconds. They came out like little crappie potatoe chips. Great! Thanks, Kaptian K.
