If you're cooking for a bunch of people...you should get a bigger fryer! I've got a two burner that does a good job for up to 20 people. It's hard for me to keep fish warm when I'm cooking....it keeps disappearing!

Grandma used to dump the cooked fish into a metal cake pan and put em in the oven on the lowest setting (she may have even kept the door cracked) to keep em warm until they were all cooked.

I can tell you one thing not to do. Don't put them in a cooler to keep them warm. They will continue to cook and be like a piece of rubber.

Cut your oven on to about 200 and put a cooling rack on a cookie sheet or something, and put the fried fillets on there. The cooling rack will let some more oil drain off and they won't get soggy sitting in the oil.

you can get cooling racks at the dollar store. they are normally 2 for a $1. they work great when cooking for big numbers of people. just remember not to cut the temp on your oven to high or the fish will get rock hard.

I put 'em on a cookie sheet with a couple layers of paper towels under them in the oven on it's lowest setting with the oven door cracked open.
