    Default Pintos and cornbread


    Just ate me two big bowls of homemade pinto beans w/ half a cast iron skillet of cornbread.
    Used the bone from our Christmas ham.
    Good eatin'
    Was gonna mix'em with great northerns but some sissy wouldn't eat'em then.
    City folk and all. Hahahahaha!

    So gotta ask.…
    How you fix yours?
    I've always wanted to try neck bones.
    Just can't find them.

    I've always had a ham hock cooked in with brown beans. I even cook Italian Green Beans with a ham hock.

    Cornbread : no sugar - no whole kernel corn - no cream style corn - no jalapenos .. and I prefer cornbread fried like a pancake, but oven baked in a iron skillet or cast iron cornstick pan will do nicely.

    Yes sir! Fried cornbread is the best.

    So I get up this morning and do my I'm happy cuz there's pintos and cornbread left over dance.
    I make my way into the kitchen.
    NO MORE CORNBREAD!

    But wait! Wait a minute! I have cornmeal.

    My brother-in-law made a big pot of pintos for our annual Christmas get-together. He had some hamhock in there with some onion.......cooked them all day until they kinda had a gravy all over them. He does them right!

    Now if I could only figure out how my grandma used to cook cabbage, I would be set. I have never in my life found anyone who could cook cabbage down like Mama Flossie did. We lost her in 1995 at the age of 87 and I've not had good cabbage since. I know she used bacon grease and she always put a little sugar in there, but I can't get it right.

    I absolutely love pinto beans. They are my favorite bean, and there are times that I have eaten them with meals every day for a month or more.

    Last year one of my toes started hurting. The next day it hurt bad. The next day I couldn't stand for even the bed sheet to touch it. Went to a doc and he said I had gout. Got some meds and it cleared up. They told me what foods caused gout. On the list, pinto beans. I have eaten every food on the list multiple times and just my luck, the beans are the trigger food for me. I can eat a small portion of them and be fine, but if I eat a bowl of them, I'll have a gout attack. No more pintos for me. It's either that or take gout meds for the rest of my life and I'm not doing that.

    Beans with bacon or fat back pieces, sliced jalapeno's and a onion. Ground cummin, to taste. Bread by Jiffy Mix. I've made all kinds of bread over the years, but can't beat Jiffy, so why try...it's cheap and easy. Pintos are my favorite side for Speck dinner's.

    Jiffy Mix has sugar in it. Sugar is okay in deserts, but doesn't belong in cornbread. They eat that stuff in Russia. LOL

    My wife and I have quarreled for 42+ years over that. Cornbread with sugar is cake said the late/great Lewis Grizzard.
