    Default Christmas Eve Comfort Food


    If you have ever tried smoked meatloaf you know it is a nice twist on a comfort food classic. My wish for a 3lb Crappie has not came through yet, but a 3lb meatloaf found it’s way on the Weber smoker this Christmas Eve afternoon. A pound of ground pork, a pound of ground venison and a pound of ground hamburger mixed with breadcrumbs, eggs, and various other spices and goodies make up this monster loaf. Throw it on a hot smoker with some apple wood and let her rip. The smoker hit about 350 and after two hours or so the internal temperature hit 165. Served with mashed potatoes, garden green beans and corn, this smoked comfort food classic is always a hit.

    I've got the 3 main ingredients in my freezer....and I really like meatloaf definitely going to try this.

    The smoker is a Weber Bullet, a charcoal smoker. This is the medium sized 18” model. They make a 14” and a 22”. I did put parchment paper under the meatloaf, poked a few slits in it to help drain the grease. One more tip about smoking meatloaf, you do not need as much smoke wood as if you were smoking a ham or ribs or such. The ground meat “absorbs” the smoke very readily and you can over smoke the meatloaf. Merry Christmas and thanks for the compliments.

    That look awesome. I always forget to add the bacon weave to my smoked meatloaf or smoked breakfast sausage. You cannot go wrong with bacon, it pairs with everything....even bacon ?!
