    Default What to do with these duck breastessess


    My son has come in with lots of ducks and the only good way I've found to prepare them is to marinate, then wrap with bacon and grill. A friend said that he's had them cut into strips and fried like deer steak. Any ideas? Was thinking of doing a bunch Sunday night for the family Christmas get-together.

    Haven't hunted ducks in over 25 years but when I was hunting the only things flying were ring necks and teal. Didn't know anything about ring necks so asked a couple of guys how to cook them, was told to pull the breasts out and squeeze enough naval oranges to cover them with juice then simmer until the juice was gone. they were great and made a good sandwich. If I had some now that's how they would be cooked.

    Cut into steak fingers, marinate in buttermilk and then roll them in seasoned flour and fry or deep fry until brown. Yummy!!

    Feed em to your dog and hope he doesn't bite you. Duck is one meat I just can't find a good way to eat.

    That dumb bookey headed SOB would bite me, I guarantee it! Actually, we like the marinated bacon wrapped duck bites, but I was hoping for some new ideas. My cousin told me about a recipe with mushrooms, onions, Uncle Ben's wild rice, and cream of mushroom soup done all day in a crock pot.........I may go with that.

    I hate to just waste them after he brought them in.

    They go good in gumbo if they are soaked to get the gamey taste out. Have not done this in years, but we used a milk soak over night.

    So it will sound crazy, but make a pot of coffee and put your duck in a crockpot and pour your coffee over the top and let it cook on medium for about 8 hours. When done shred your meat and mix with your favorite bbq sauce and let it warm up again for about 10-15 min. You will definitely thank me.

    Cut it in small pieces and crockpot pot it 8 hours and then add vegetables last 2 hours,just did goose this way turn out nice.

    with a meat mallet beat the breasts till tenderized. Dredge in Flour,Salt and pepper. fry in corn oil till, and this is the most important part, the breast runs clear juice. I stick it with a fork and really watch this part. If it is red juice keep going. the minute it is clear pull it off.
