    Default Panko is the word

and so simple it defies the imagination . cut said fillets in strips , give them a light egg bath and put them in a bag of panko and regular bread crumbs about 50 50 with whatever spices you enjoy . press the fingers frimly in the mixture and place then on a lightly oiled cookie sheet....put them in a preheated 350 degree oven for 20 minutes and bring out as crispy a fish as there ever was .....put in em some warm tortillas with some pico and salsa and a sprinkle of cheese ....and THEN......
try not to make yourself sick eating to many of them ......

Sorry to say I get all my fish pre-battered with Long Johns secret stuff.

Never tried it on fish but that is a good idea!

I tried this today and it was excellent. I mixed panko and crushed Ritz crackers. The crackers gave them a buttery taste. Thanks Ketchin for the recipe.

panko is some good stuff for sure it bakes and fries well and is sure enough crispy , glad you enjoyed it . the ways to mix up your breading are to numerous to list but I have tried crushed corn chips as well in my mixes .
