I have a hard time finding a surface that to cook them on the grill that won't stick.
I split a mess of crappie with my mother this weekend. She'd been wanting some, and trying to make amends for my teenage years I figured it would be best if I got my momma some crappie. Thanks to Slabprowler, we had enough for a mess for both families.
I washed the fillets, salted them and lightly coated with Old Bay seasoning. I cooked them at 300 on the Big Green Egg, letting them get some smoke. I cooked them on a pizza stone (probably not the best cooking surface) They were delicious.

That looks good...I thought many times about cooking them out on the grill,but always chicken out because I'm worried I will ruin them.After looking at those pictures I might have to give it a try.

I use a fish basket. The current one has a copper wash of sorts. A little spay oil before the fish goes in, works fine. The only glitch is you gotta leave the top ajar for the handle....

I use a stainless perforated Weber pan, works great with olive oil and what ever seasoning you want. Almost no work, just need to make sure you do not over cook.
I don't know what to cook them on to where they won't stick, but they'll sure stick to a pizza stone. I put olive oil on it maybe 5 min before cooking then sprayed with Pam olive oil spray just before I put the fish on. I like my grilled fish a little overdone, a little on the dry side. They didn't stick until they started getting dry.
Thanks for the replies, I haven't checked this thread in several days and didn't know anyone had replied. The Old Bay seasoning was delicious on the fish and the smoke just topped it off. My wife really liked them.
