OK, here's another easy Crappie Recipe for y'all to try:

Easy Crappie Alfredo

Steep (don't boil) 4 medium size crappie fillets (or equivalent) in 4-cups of water seasoned with 1-Tablespoon Old Bay Seasoning (more or less to suit taste) for about 15-minutes and then remove with a large slotted spoon when ready to serve.

While fillets are steeping, cook a small package of your favorite style of egg noodles in a heavy sauce pan following package directions, drain and return to pan to keep warm.

While fillets and noodles are cooking, heat one jar prepared Alfredo Sauce in the microwave in a heavy, glass, microwave-safe bowl stirring occasionally until hot.

To Serve:
Place a serving of cooked noodles in a large, shallow bowl, flake two cooked fillets into small, bite-size pieces and place over noodles, cover with heated Alfredo Sauce and serve hot with garlic bread, side salad or steamed veggies.

Takes about 20-minutes to prepare and makes two generous servings.

That does sound good Jerry but it's just to dang blame hard getting fresh crappie fillets past the grease. :D

Use some frozen fillets from your freezer.

Thanks for the recipe Jerry. Since my wife has to stay away from fried foods I am on the lookout for recipes just like this. I think we will enjoy this. Since I just so happen to have come into some fillets recently I will give it a try.

Bring your water and seasoning to a boil and then turn the burner off. Drop the crappie fillets in the hot water and that is steeping. You can leave them there for several minutes and not over cook them.

Here's a defintion of "steep" at Dictionary.com. Scroll down to the third definition under "verb" - http://dictionary.reference.com/browse/steep

It may not be the best word to describe what I mean. I could use "imbue" but I don't think that would help at all. For Crappie Dip, Crappie Chowder and Crappie Alfredo I cook crappie fillets over low heat in water that is very hot - near boiling but not quite boiling and not even quite a simmer - like you would make tea the old fashioned way in a pan on the stove. If you boil them they tend to get mushy and/or fall apart.
