    Talking Good Breading for Crappie or Anything


    Plenty of breading in supermarkets, and tried a few different one's, but sometimes it's better to do it yourself. I've tried to deep fry frog legs, perch, and crappie, only to have the breading fall off. Not sure if this
    is new to anybody else, but Toasted Bread Crumbs work's great. Toast grounded up in a processor, and applied after the flour and an egg/milk wash sticks great. The flavor is good and I have used this on shrimp, crappie, perch, scallops, and mushrooms so far in deep frying!

    Lately when i don't beer batter I've been using hooter's wing breading for seafood.

    Secret to keep breading from falling off is add flour to your milk/egg wash and wisk well. This also eliminates a step for flouring the filets before the egg wash....I usually add about a tablespoon per egg in the wash.

    slightly seasoned corn meal - no egg, milk or beer for me. Had some tonight and none of the corn meal came off. Take your time and roll the fish in the corn meal, then let it sit for a minute or two for the corn meal to adhere to the fish. Straight into the oil and then enjoy.

    Add mustard to your milk and egg wash and breading will stick

    I don't need a wash when using that Louisianna Fish Fry. If I want the fish a little spicier, I leave the drained filets in a Ziploc bag and add enough hot sauce to coat them. Either way, they are good.

    To help with the breading falling off you can add mustard straight to the fish when seasoning. I also batter my fish while I have a batch in the grease it allows the batter to stick better when you drop it into the grease.     I've been using this breading for years now and my family and friends all love when i fry fish. This company is located in Benton, KY, right up the road from where i stay when i make my spring trips to Ky lake. It's also very good for baking fish too.
