Default Strawberry fig preserve, not crappie but it's good

This is my mother's recipe for Strawberry fig preserve

9 cups mashed figs
9 cups sugar
2 giant packages Jell-O (Strawberry)
Juice of 1 lemon

Wash figs and mash, I peel them. Mix sugar, jell-o and lemon juice, Stir well. Bring to a boil, reduce heat to a strong simmer, and stir constantly with wooden spoon. Cook 25 minutes. Put into sterilized jars, put seals, and lids on and turn jars upside down for five minutes. After five minutes turn right side up and do not touch for 24 hours. Everyone seems to love this.
It does not set up real firm but spreads very well on toast or biscuits.
She would make it using Raspberry Jell-o and it was as good as the Strawberry.

You could try adding a little tapioca to thicken up the jam. I make freezer jam that is just fruit, sugar and tapioca and it does quite well.

My Mom make a preserve just like that and it is very good.

That is the same reciepe that my Italian Mother In Law passed down to my wife many years ago. You two must be related.LOL
