Make crispy crappie
rinse and pat dry fillets.
cut fillets in 1/2 inch strips so they will cook evenly on all sides.
salt and pepper fillets to taste.
in a bowl add one cup milk and one egg beat together.
in another bowl add corn meal (quaker in the round box is the best ) is fine ground and not gritty like others.
dip fillets in egg-milk mixture then roll in the cornmeal.
in a frying pan add enough cooking oil to float the fillets.
heat oil to 375 degrees f. drop fillets into pan only 7 to 8 pieces at a time only after temp reaches 375 f.
don't crowed the fillets so they can cook evenly. once the fillets float to the top take them out they are done.
Keep oil 375 deg or more or the fish will get oil soaked.
it only takes seconds to fry fish not minutes.
