Tennessee Cornbread. 6 tablespoons real butter, 1 cup cornmeal, 3/4 cup all purpose flour, 1 tablespoon sugar, 1 1/2 teaspoon baking powder, 1 teaspoon salt, 2 Eggs, 1 1/2 cup buttermilk. Mix up and bake in iron greased skillet at 375 degrees.
TEN MINUTE PEANUT BUTTER COOKIES
• ½ cup brown sugar
• ½ cup white sugar or sugar substitute
• 1 cup of crunchy peanut butter
• 1 egg
• Optional: add pecan or walnuts to taste
Mix all ingredients. Tablespoon mixture onto cookie sheet. Bake at 350 degrees for about ten minutes.

Farmers casserole: I make this every Christmas morning
TOTAL TIME: Prep: 10 min. + chilling Bake: 55 min.
MAKES: 6 servings
Ingredients
3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese
1 cup cubed fully cooked ham
1/4 cup chopped green onions
4 eggs
1 can (12 ounces) evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt
Directions
1. Place potatoes in an 8-in.-square baking dish. Sprinkle with cheese, ham and onions. Whisk eggs, milk, pepper and salt; pour over all. Cover and refrigerate for several hours or overnight.
2. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 55-60 minutes or until a knife inserted near center comes out clean. Yield: 6 servings.
