    I use no belly, take off all dark meat on fillets and slice them horizontally. We like our crunchy so 1/2" thick and 1-1/2" wide. If you keep the slices consistent they will all fry up the same.

    Great thanks,I fish for channelcat,and only fillet them,I'm gathering you are just filleting,not skinning?

    Yes. I throw out jugs on a flat then move off to the channel edge and fish brush piles for crappie. We mostly get blues but do get an occasional flathead.
