    Default fish pie

i tried this recipe the other day and was very different and darned good, i used a mixture of gill, crappie and some white bass fillets

    FISH AND CRABMEAT PIE

1 (9") deep dish pie crust
    4 fish fillets
    6 oz. crabmeat, flaked
1 (8 oz.) can asparagus spears
    1 egg white, slightly beaten
    2 tbsp. butter
    1 lg. onion, sliced
    1 lg. tomato, sliced
    3 eggs, beaten
    3/4 c. evaporated milk
    1/4 c. grated Swiss cheese
    2 dashes hot sauce
    1/4 tsp. salt
    Pepper

Melt fat and fry onions until clear. Beat eggs and add milk and seasonings. Brush pie crust with egg white. Layer fish fillets, crabmeat and asparagus alternately in pie crust. Pour in egg and milk batter. Place on top sliced onions and tomatoes and sprinkle Swiss cheese on top. Cook in preheated oven at 400 degrees for the first 10 minutes. Then reduce heat to 350 degrees and cook another 30 minutes. Serve hot.

No green Onions? I think a little more than a dash of hot sauce. Maybe a few shrimp and a little crisp crumbled bacon. This sounds good I am going to have to try it. Thanks for the recipe.

    Default John do you.....

Do you leave the fillets whole or do you need to slice the in strips? Recipe sound great.

I tried your recipe, just like you wrote it, it's great. I will try it again to see if the additions change it too much. Thanks again.
