A buddy of mine fries it just like we do Crappie and they are great that way. You can bake them or grill them in butter and lemon juice but I don't really care for it that way.
Got some lake trout today ....gave most of it away. Could sure use a good recipe to cook up the rest tomorrow.

Smoke em. that's what I do anymore. I like a good brine with brown sugar and garlic.

A little lemon pepper and a pad of butter on the fillet, and you're in business!
Leave the skin on when you fillet them and grill with the top down on your grill. by the time the skin starts to get crisp, the fillet is cooked through.
Thanks for the advice .... but I decided to try the way we always used to cook our fish
Dampen the fillets
spice the damp fillets
then into the flower
then into egg and milk
then corn flake crumbs
good hot grease till nice and brown
they were great
