    Thumbs up Try This One

My Grandkids eat these faster than I can cook them! :D Now this will make several hushpuppies cause I usually feed several when I fry fish.

    I call these Possumtrot Puppies!

Dice 1 med. sweet onion into 1/4" pieces and add to the following

Mix in a med. size bowl

2 1/2 cups of your favorite SELF RISING YELLOW corn meal.
1/4 cup of SELF RISING flour.
    1 large egg
    1 heeping tablespoon of sugar.
    1 tablespoon of cooking oil.
1 tablespoon of pepper and 1 teaspoon of salt. (Or to Taste)
1 or 3/4 of a can of cream corn. I use 3/4 myself.
    A pinch of garlic powder.
Add milk to make a batter that just hold to a spoon without dripping off. The wetter the better.

Preheat cooking oil to between 350 and 375 degrees depending on your cooker. Role them over as needed when they float. Cook till Golded Brown.

Take 2 table spoons dip 1 in oil and then scoop up some mix. Use the other to round off mix and push into grease.

Heck I gotta go! I just made myself hungry!

Maybe you just don't like hushpuppies???

There ain't much difference in most recipes

Misc. amt. corn meal (self rising)
    small misc. amt of flour
    chopped onion
    little salt
    little black pepper
    1 egg
    milk
sometime I put a dash of garlic powder
sometimes a tsp. or so of sugar
sometimes I put corn or chopped fresh bell or jalapeno peppers in them

Adjust to make your own recipe the way you like them. Main thing is about 2 C meal, 1/4 C flour, egg, and milk.

Sweet milk is enough for me usually, so I don't usually mess with the sugar.
I like Wiesenbergers corn meal mix. It ain't enriched and its all natural water ground corn. Never figured why you'd bleach and remove all the nutrients in something and then put a few back in and call it good. When it was just fine or better to begin with.
Ya ain't holdin' your mouth right.

I've tried numerous recipies on hushpuppies and the one I like best is using half your favorite cornmeal and half jiffy cormeal mix with chopped onions and one egg with milk to blend untill mixture is wet enough to fall off your teaspoon into hot grease........

    1 cup selfrising flower
    one egg
    one large Onion chopped fine.
    Plenty of black pepper
    salt taste
And a dash of garlic powder

Then open a cold beer, Pour just a small amount in the mix. I mix mine up by hand. Drink the rest.

I got this one from my pal Crappiemagnet

    Hush Puppies

    Vegetable oil
    1 cup yellow cornmeal
    1/3 cup all-purpose flour
    1 teaspoon sugar
    1 teaspoon baking powder
    1/8 teaspoon salt
    1/8 teaspoon cayenne
    1 egg
    1/4 cup chopped onion
    1 can cream-style corn (about 8oz.)
    2 tablespoons buttermilk

In a deep-fat fryer or saucepan, heat oil(2-4 inches) to 375 degrees.Mix the cornmeal, flour, sugar, baking powder, salt and the cayenne.Stir in the remaining ingredients until just combined.Drop batter bythe tablespoonfuls into the hot oil.Fry a few at a time, turning over one or two times, until dark golden brown,4 to 5 minutes.Drain on paper towels.Keep warm in 175 degree oven until all are done.

A very tasty compliment to any fish.

I pour my hushpuppy batter into a jerky gun (with the attatchment used to make the slim jim type) and squeeze the batter into the grease. It changes the texture of the hushpuppy, they cook more evenly....try it
I can only wish to be as good as my dog thinks I am
