    Default Some of the best ever.

    This will be moved eventually and I understand. I had to pass this on. I like fish on the table and try about any new way I can to make it good, different and not completely cover the taste of the fish. This one is off the charts for me. While watching Babe Winkelman's show about a week ago, his wife Chris gives a recipe on every show. She showed this with walleye and I substituted Crappie, of course. It's even healthy being baked. Here's the deal;
    a pound or so of filets
    9X13 glass pan
    1 cup of shredded parmesan cheese
    Crushed red pepper
    parsley
    dried garlic, all of these to taste and I don't measure anyway
    dump the cheese and seasonings in a good sized bowl and mix til blended. I split the filets down the middle and coat them in the bowl of cheese and stuff like you would bread for frying. Arrange them in the pan, spread the leftover cheese on top, and put them into a 350* preheated oven. Cook time for me was just over 15 minutes. cook til thickest filets flake and pull and serve. A bed of yellow rice with fish over that, cole slaw and broccoli salad with a big glass of lemonade. I'm severely FDH (Fat, Dumb and Happy) I've tried a bunch and this is one of the best and simplest I have ever found. Hope you try it and enjoy it as much as I did.
    Oh yeah, here's the proof;
