    Default What to do with left over crappie fillets


    I was listening to the radio and they were advertise'n fish tacos. So today I came in hungry from fishing. Looked in fridge for something quick. So I get a brainstorm.:rolleyes: I took a soft flour burrito shell put pepper jack cheese and left over fried Crappie fillets on 1/2. Then folded over shell and microwaved for a minute to melt cheese. Either it's pretty good or I was starving.:o

    There is also a post on here somewhere about wrapping them in bacon and cooking them in the oven. Not sure where it is but maybe someone will post a link.

    Yours probably would work better if you were starving though as it only took a minute.

    If they happen to be baked or lightly battered try layering them with rice, and monterey jack cheese and a can of cream of chicken soup in a caserole dish. Top it with jack cheese and parmesian. It only needs to bake for about a half hour at most.

    We always make more than necessary for one meal so we can enjoy them later that day or for the next days meal in a different recipe.

    I usually intentionally make more than I know we will eat so that there will be left overs to snack on. Otherwise you got to go buy taterchips or something. lol

    I like to break them up in a Salad. They are great that way. Just make up a Salad with tomato's, lettuce, Bacon Bit's some Avocado and break the filltes up on it and add you favorite Dressing. YUM Ron

    I make lots of extra as well and then eat them cold. I love cold fried fish!
