    Can you tune cranks to plane left or right or is a planer board necessary ?

    You "can" tune a crankbait to run to one side or the other .... but, it generally has to be retrieved at a much slower rate than normal. Otherwise, as the other members have said, it will tend to turn on its side &/or roll over.
    If planer boards aren't a feasible method ... you'll just have to "plow" that section of the water, in "rows".
