been cookin with this for buncha years, everyone likes and wants the recipe, thought I'd share - hope you like it
I take a gallon freezer bag, dump a large (17 oz) can Tony Chacheres orig creole seasoning in, then dump bout twice that much corn meal in and go to tasting, Tonys is salty so you keep adding corn meal and tasting til you git the salt to your liking, I usually wind up with bout a half bag of mix when I'm thru mixin.
thats it! you may think it's gonna be HOT!---nope, it won't be hot at all. my wife likes hers a little spicy so she sprinkles a little Tonys on AFTER they come outta the grease
I dump a handfull of fish in the bag and shuffles it around, drops em in tha pot, when I'm done cookin I seal it up and put it in the freezer till next time. when it gets low just add more tonys and meal
