    Default Tom Yum Crappie


    This is a special dish that my mother makes.

    4 medium crappie fillets
    1/2 lb of crab legs (any crab)
    1 1/2 lb whole shrimp (heads and all)
    2 tbspn. grated ginger
    4 red chili pepper
    2 cloves garlic
    1 tablespoon lime zest
    1 stalk lemon grass (if you can find)
    1/2 cup scallion
    1/2 cup cilantro
    2 tablespoon Thai red curry
    1 cup coconut milk.
    1/2 cup crab meat

    In a dutch pot turn the heat to med high, add the oil then the crab legs and 1/2 lbs of shrimp. Then about 2 minutes add the ginger, garlic, chili, lime zest, red curry, lemon grass, cilantro, and scallions and find somthing suitable to crush all the ingredients while cooking. Then add water just to cover and simmer for 30 minutes, then turn off the heat and add the coconut milk. After that, strain the broth and discard the ingredients. Put the broth back into the pot and simmer, then poach your 4 crappie fillets until cook and then add crab meat and the rest of shrimp. serve with steamed jasmine rice.

    Sounds like it has some Vietnamise influences in there.
