The meat is so delicate that I would scale them, cut the heads off and cutt them, otherwise you just run the risk of them falling apart on the grill.
Use a no stick spray or something to keep them from stick. I usually brush mine with a little olive oil then apply some cajun seasoning.
Good stuff for sure although I am not sure anything beats a plate of golden brown fried fillets. I don't care what the doctor says.
